Commission a knife

A custom knife starts with a conversation about how you cook and what you enjoy using. You do not need a finished design to get in touch – an idea, a favourite knife or a photo of something you like is a perfectly good starting point.

How it works

1. Share your idea. Tell me what the knife is for, roughly what you are looking for and what budget you have in mind. The more I know about how you cook, the better the knife will fit you.

2. We shape the design together. We talk through profile, length, grind, steel, handle and finish. I will suggest what I think will work best for your use, and point out where your wishes and practical performance pull in different directions.

3. You receive a quote. Once we agree on the design, I send you a clear quote with the price, an estimated completion time and exactly what is included.

4. A deposit secures your place. When you accept the quote, a deposit reserves your spot in my workshop schedule and covers the materials chosen for your knife. The remaining amount is due when the knife is finished.

5. Forging and finishing. I keep you updated along the way, with photos at key stages such as forging, grinding and the finished handle.

6. Delivery. Before shipping, every knife is sharpened, tested and checked by me. It is then packed carefully and sent with tracking.

What to include in your enquiry

  • Knife type and approximate blade length (for example a 210–240 mm gyuto or a small petty)
  • What you will mainly use it for, and whether you are right- or left-handed
  • Any preferences for steel, Damascus pattern, handle wood or finish
  • Your budget and any date you would like the knife by
  • Photos of knives you like – a piece from my past work is a great reference

What your quote covers

Every quote lists exactly what is included, so there are no surprises. Depending on the project, that can include a saya (wooden blade cover), a presentation box, engraving or a custom handle. If you would like any of these, just mention it in your enquiry.

Timing and waiting list

Each knife is forged and finished by hand, one at a time, so commissions are scheduled around my workshop capacity. The estimated completion time is stated in your quote, and I will tell you upfront if my schedule is full rather than keep you waiting without an answer.

Made individually

Natural materials and hand-forged steel give every knife its own character. Grain, Damascus pattern and colour will always vary a little, which is part of what makes the knife yours. A past knife can be a starting point for the discussion, rather than a promise of an identical copy.
