This 355 mm Sakimaru Sujihiki combines an impressive, elongated profile with refined cutting geometry, designed for precision and long, clean cuts through proteins.

The blade is forged from in-house made Damascus, combining layers of pure nickel and O2 around an Apex Ultra core hardened to approximately 64 HRC. The contrasting materials create a striking Damascus pattern, highlighting the intricate layered construction and craftsmanship behind the blade.

An S-grind provides efficient cutting performance while helping food release from the blade. The substantial 4.6 mm spine tapers to just 1.7 mm near the tip, offering a balance of strength and precision. Despite its impressive 355 mm blade length, the knife weighs just 264 grams.

The handle combines beautifully figured ringed gidgee with mammoth tusk, African Blackwood, and sterling silver spacers. The contrast between the richly patterned wood, natural mammoth tusk, and polished silver creates a refined, luxurious finish that complements the character of the Damascus blade.

At 540 mm overall, this is a distinctive piece of craftsmanship, bringing together exceptional materials, intricate steelwork, and purposeful cutting geometry.

Knife care

Carbon steel rewards a little attention: wash by hand, dry straight away and never use the dishwasher. A light patina will develop with use.
