This 200 mm Honyaki Gyuto combines an elegant blade profile with refined craftsmanship, offering a balance of precision, performance, and control.
The blade is forged from a single piece of 26C3 Spicy White carbon steel and differentially hardened (Harmon) to approximately 63 HRC at the cutting edge. This heat treatment creates a hard cutting edge while retaining a softer, tougher spine, highlighting the craftsmanship involved in producing a Honyaki blade.
A convex grind provides smooth, controlled cutting performance, while the blade tapers from 2.8 mm at the heel to just 0.9 mm near the tip. Weighing 179 grams, the knife offers a balanced feel with a fine, precise tip for detailed work.
The handle combines beautifully figured ringed gidgee with mammoth and blonde horn. The contrast between the richly patterned wood and natural materials creates a distinctive, elegant finish.

Carbon steel rewards a little attention: wash by hand, dry straight away and never use the dishwasher. A light patina will develop with use.
