This 250 mm Gyuto combines an elegant, elongated profile with refined cutting geometry, offering precision, versatility, and excellent control in the kitchen.
The blade is forged from in-house made Damascus, combining layers of 15N20 and 1084 carbon steel, hardened to approximately 63 HRC. The intricate Damascus pattern highlights the layered construction, giving the blade a distinctive character.
An S-grind provides efficient cutting performance while helping food release from the blade. The pronounced distal taper, from 4.3 mm at the heel to just 0.6 mm near the tip, creates a fine, precise tip while maintaining a substantial spine near the handle.
The handle combines richly figured desert ironwood with mammoth, blonde horn, and a subtle G10 spacer. The warm tones and contrasting natural materials create an elegant finish that complements the Damascus blade.
