This 250 mm Gyuto combines a bold, elegant profile with refined craftsmanship, offering excellent versatility, balance, and control in the kitchen.
The blade is forged from in-house made Damascus, combining layers of 15N20 and 1084 carbon steel, hardened to approximately 63 HRC. The flowing Damascus pattern highlights the layered construction, giving the blade a distinctive character.
A convex grind provides smooth, efficient cutting performance, while the generous 57 mm heel height offers excellent knuckle clearance. The pronounced distal taper, from 4.6 mm at the heel to just 0.9 mm near the tip, creates a fine, precise tip while maintaining a substantial spine. Weighing 244 grams, the knife offers a solid, balanced feel.
The handle combines richly figured desert ironwood with buffalo horn, blonde horn, and a subtle G10 spacer. The warm tones and contrasting natural materials create an elegant finish that complements the Damascus blade.

Carbon steel rewards a little attention: wash by hand, dry straight away and never use the dishwasher. A light patina will develop with use.
