This 160 mm Nakiri combines traditional Japanese design with refined cutting geometry, offering excellent precision and efficiency for vegetable preparation.
The blade is forged from in-house made Go-Mai, combining O2 carbon steel and nickel around an O2 core hardened to approximately 63 HRC. The layered construction creates a distinctive contrast between the different materials, highlighting the craftsmanship behind the blade.
An S-grind provides excellent food release while maintaining efficient cutting geometry. With a generous 54 mm heel height and a balanced weight of 179 grams, the knife offers excellent control and knuckle clearance for everyday vegetable preparation.
The handle combines beautifully figured elm burl with African Blackwood, creating an elegant contrast between the natural warmth of the burl and the deep, dark tones of the wood.
