This 100 mm Tournier combines compact proportions with refined craftsmanship, designed for precision and control when working with smaller ingredients and intricate kitchen tasks.
The blade is forged from in-house made Damascus, combining layers of 15N20 and 1084 around an Apex Ultra core hardened to approximately 65 HRC. The flowing Damascus pattern highlights the layered construction, giving the blade a distinctive character.
A full hollow grind provides thin, efficient cutting geometry, allowing for precise and controlled cuts. The compact 100 mm blade offers excellent maneuverability for detailed preparation work.
The handle combines beautifully figured ringed gidgee, African Blackwood, and a subtle G10 spacer. The rich natural patterns and contrasting dark tones create an elegant, understated finish.
